Okay, here’s our cast of characters: 2 c flour, 1 c (plus 2 Tbls) butter, water, 2 tsp almond flavoring, 1 tsp vanilla extract, 1 1/2 c powdered sugar, 3 egg
Step one: Mix 1/2 c butter and 1 c all purpose flour with fork to make small pieces.
Step 2: Add 4 Tbls water (gradually) to form pastry.
Step 3: Divide dough into two balls. Form rectangle shapes on a parchment lined (or silpat) cookie sheet. Set aside.
Step 4: Boil together 1/2 c unsalted butter (or margarine if that’s what you have) and 1 cup water. Add 2 tsp almond flavoring and 1 cup flour. Take off the heat and stir like mad!
Step 5: Add 3 eggs (ONE AT A TIME PLEASE). The dough will turn to a beautiful yellow!
Step 6: Spread egg mixture evenly over the two rectangles. Put in a 350 oven and bake for around 45 minutes (you want it to be nice and brown)
Step 7: While your pastry is baking (and giving your home the most amazing aroma possible!) start on the icing.
Mix together 1 1/2 c powdered sugar (sifted is helpful), 2 Tbls margarine or butter, 1 tsp vanilla extract, 1 tsp almond flavoring, 1 to 2 Tbls water (add slowly)
Step 8: Take out the pastry and cool completely!
Step 9: Frost and devour. Really, so good. (When my kids help me, we often put Easter sprinkles over the icing. So fun!)
(If you want to do this a day before, go ahead and make it up. Don’t bake it until the next day. It refrigerates really well!)

I was born in Jos, Nigeria many years ago. I spent the next nineteen years living in Liberia, Kenya and Ethiopia.
thanks for the recipe!! They look super yummy. I did have to laugh though as I have never seen a “stick of butter” – assuming that’s whats in the first photo! I often Google recipes and lots ask for a stick of butter – which I have no idea how much that is!! Looking forward to trying these out this Easter weekend
