A DIET


I hate the word diet. I don’t like being on a diet. I love food and I don’t like being deprived of baking, cooking and creating.

I am on a diet. A Gluten Free diet. I dislike this new status. I can no longer pull out a bag of flour, can of oats and create. Instead, I have to follow recipes. But as time goes on with this new diet/lifestyle, I am learning to adjust.

I purchased my first gluten free baking cookbook. I’m heading to the health food store today to purchase xathan gum and tapioca flour. I have cleansed my pantry of wheat and barley (At least for me. Until I can perfect a chocolate chip cookie the kids will eat, they still have their wheat items!).

I’ve had to rearrange my entire mindset. I used to think that fiber and flax and millet were healthy. I’ve realized now how much they made my life really miserable.

I think this is how it will be with the adoption. I have a particular mindset of what it’s like to “bring a child home.” But instead of bringing a newborn home and starting from scratch, so to speak, we’ll be flying halfway around the world to pick up an older baby/toddler and introduce her to life at our house.

So as I adjust to my new way of eating, I am reminded in the back of my brain that everything does change and though it’s tough to change, the results (at least in my case with my new diet) are really quite rewarding.

PS. On the adoption front, we are starting week 5 waiting for our I171H immigration form to arrive home. All other dossier documents are reading for authentication and once that’s done, off to the Ethiopian Embassy they go!

    I have been wanting to try to a really healthy regiment of eating, but so far have not been disciplined enough. If you’ve got tips or a plan or a regime or list of food items to avoid (besides the utter obvious ones, like ones that you don’t know have bad stuff in them) could you share?

    Gluten free is very healthy. I do a lot of brown rice, grilled chicken and vegies. Some favorites are bean and vegie salads with lemon juice and olive oil.

    For snacks I’ll do a rice cake with peanut butter (I like Smart Balance brand). Cliff bars are great and VERY filling, good for post run snack. I eat almonds by the handful and usually consume some sort of turkey or ham for a snack in the pm. I find I need a lot of protein when training this hard.

    Desserts…My favorite is Breyers half fat chocolate. Drinks: A new favorite is cranberry juice, coconut rum and lime juice. Addicting! I usually drink seltzer water and juice (I try to avoid all caffine sodas). We love coffee around here though!

    Oh, I am sooo behind in the posts. Wow, you are a woman on a mission, I don’t think I could give up sour dough bread…

    Have you ever cooked with nut “flour” or almond “flour”? It’s a great alternative to wheat. If you are interested I have a great banana nut cake recipe that Igor really enjoys. I also have a zucchini bread recipe with almond “flour”. Igor loves it as well. It’s a great way to get my little guy to eat more veggies. heehehe
    my girlfriend made strawberry icecream without dairy or sugar. It was very good. She’s going to teach me how to make it if you are interested.

    Could I have the recipes you listed? They sound great…I have had NO success in baking gluten free bread…it is like a brick!
