When I travel or find myself away from my pantry and refrigerator for extended periods of time, eating becomes a chore. For me, finding easy, quick, healthy, gluten free options is really frustrating. Especially when I have to be diligent that no gluten touches my mouth at least a week prior to any running race.
I stopped at our local grocery store (shout out to King Soopers here!) and found!!!!! some amazing gluten free options.
The first order of business was finding something for dinner that did not require heating or long term refrigeration. Amy’s gluten free burrito was amazing! I found it in the health food freezer section and had the option of a dairy free GF choice as well. Since I knew I’d be running for a while the next morning, I chose cheese. I let that frozen burrito sit in my hotel room for a few hours and gleefully chomped down on it around 7 pm. This wrap will be my go to dinner for camping, hiking, running trips. Super yummy!
I also LOVE to snack; especially anything salty. Chex mix, crackers, pretzels get old after a while. When I lived in Kenya, I loved the Indian snacking mix we called chevdo. Well thanks King Soopers…you have brought back not only happy memories of smacking down pounds of chevdo, but also have made it gluten free.
Finally, at 48 hours before a race I begin hydrating. NUUN is my go to hydration drink. It’s a fun, fizzy tablet that goes into my Camelbak and I begin chugging that stuff. Race morning I was intestinal distress free, super well hydrated and ready to race. The starts aligned (shout out to Pam!) and it was so much fun!
