I love avocados. Mashed, diced, sliced, whole. Any way…I love them.
My new favorite lunch is Corn, Avocado and Tomato salad. Mix up a can of good old corn, one avocado, one tomato (all diced or drained is best). Chop up a handful of cilantro (fresh), salt and pepper, juice of one lime (and if you get really fancy, zest it first), handful of pickled jalapenos chopped. Mix it all together and eat with a bowl of tortilla chips. Yummy!

you are making my mouth water! if you haven’t already done this already, this summer try your recipe with fresh corn cut off the cob and fresh basil- it is one of my all time favs. Have you ever has an avocado sandwich? Split pita bread open, add cream cheese, sliced avocados and tomatoes. It’s soooo good!!
