Pumpkin Chocolate Chip Biscotti

I made these today.  Go here for the recipe.  Oh my, couldn’t wait until phase two of the recipe to actually bake into biscotti and just ate the dough, raw eggs and all.  Now that was not smart, considering that I’ve seen and experienced first hand the effects of salmonella!

Life is going better.  We are still quarantined, of sorts.  Which means I can’t take Desta to any public places and anyone who is sick, well, you have to stay away from our house.  We are hoping that once October comes to an end and Desta begins her shots, life will be truly back to normal.  I know Tobin will be very happy to have Mommy take him to school and taekwondo.  It’s been a battle the last few days.

So adjusting and cooking and baking and running (well, if you count 45 minutes on an 8-year-old treadmill as running).  It feels good to create a new normal.

Now I just need to not be exhausted and ready to crawl into bed at 7:30 pm every night.
