Each year, around this time, I’m amazed with how much the weather impacts me. This winter has seemed so long yet when I look at Desta and her amazing progress, it seems short.
It’s barely 6 am and the weather is already at a balmy 52 degrees. I see the sun peeping over the horizon, I hear the birds chirping and my heart sings.
I love spring, I love warmth. I love walking around the neighborhood with my kids and spotting little tulip buds popping through the earth. I love seeing the snow melt and the green grass coming through.
I love Easter. I love the food that comes with Easter. One of my favorite traditions growing up was eating Danish Puff pastry Easter weekend. I’ve decided to go ahead and make it today and post the recipe here. It’s super easy, crumbly, almondy delicious, NOT gluten free but worth every bite. I promise!
Stop and sniff the clean fresh spring air. Go for a walk and look for the flowers in the ground and come on back here tonight for some Danish Puff pastry tasting!
